This is an extra extra special one done generally for the loved ones in the family 🙂 The reason being its tedious to do and if you want to be meticulous with it there are a few more steps involved apart from what the pictures hold below. But lets wind a thread over that and move on to the meat feast that wraps the tastes buds of you tongue with ecstasy. This ladies and gentlemen is one of the finest Goan Food has to offer, the Beef Olive Rolls 🙂
This is not the conventional beef olives, this is the Goan Beef Olives, we do it with spice and the flavors of Goa.
Main Ingredients:
1/2 Kg Undercut Meat Slices
250 Gms Bacon Pieces
1 Sliced Onion
1 Potato Stripes
2 Green Chillies Cut
8 Flakes of Garlic Cut
1/2 Inch Ginger Juliennes
8 Olives Cut into Halves
For Saute –
1 Onion Chopped
1 Tomato Chopped
For Grinding –
10 Kashmiri Chillies
1 Tsp Cumin seeds
7-8 flakes Garlic
1 tsp coriander seeds
10 cloves
4-5 small pieces of cinnamon sticks
10 peppercorns
Small ball of Tamarind
1 Tsp Turmeric
2 Tbps Vinegar
Now that you have all the ingredients ready, yes that is a big bunch 🙂 It’s time to get rolling. Lets just start off by salting the slices of Undercut.
Then add the Vinegar to the slices
Once that’s done its time for some art 🙂 Place each slice of meat where you can spread it out and flatten it.
Once its neatly spread as shown in the picture above you can now begin placing the delicious filling of the roles. What better way to fill it up than with Bacon 🙂 Bacon for the win!
Place the Onion on the bacon, add the split slice of green chilly, you can also lay in the potato and the garlic.
Don’t forget to add the cut olive as well, unless of course you don’t like olives 🙂
So now that all the stuffing is laid out, its time to turn it into the beef rolls.
Start rolling the slice of beef from the side where the stuffing is placed.
Once you got it rolled its then time to ensure they do not open up if its for guests, you need to tie them up. But since ours are going to be consumed for us we take a little short cut.
Instead of tying the beef olives we compress them by squeezing them in the palm of the hand.
Once you have a bunch of these its time to progress to the next step keep them aside for now.
Can you imagine what these are going to taste like 🙂 Put them all in a pan and its time to apply some pressure on it.
Cover them and keep it under weight.
Put it on the fire and let it cook until it gets dry.
Once its semi cooked you can take it off the fire and either use the same or a different vessel to proceed.
While the vessel is cooling off put all the masala ingredients in the mixer and get it ready. Now its time to saute the onions and tomatoes!
Saute the onions and tomatoes for a while!
Now its time to fry the masala for a bit 🙂
Stir fry the beef olive masala for a while!
Add some water for the gravy.
Carefully add the beef olives ensuring you don’t open them up. It’s even trickier to turn them.
Always use a slow fire to cook for approximately 20 minutes more 🙂 Ensure the level of water is half way to the beef rolls so you need to turn them only.
Turn the beef rolls over and i’m positive by now your tummy should be rumbling!
And finally there you have it, a reward for all the effort and hard work that has gone into this dish. These Beef Olives is a real treat for anyone who manages to gets their hands on it 🙂 Bon Appétit my lovelies!
