The Goan Mixed Meat Stew, is something of a delicacy and generally makes it way to the table on occasions. The recipe takes a good amount of kitchen time and is also extremely heavy on the stomach. A good siesta is recommended post the goan stew with rice 🙂 I do apologize for the camera I used was not mine, but my sisters, it doesn’t seem to reprodce colors quite accurately, though it made my job of pictures in low light very easy.
Mixed Meat Stew Ingredients
250 gms boneless pork
250 gms beef
200 gms boneless chicken
150 gms skinless goa sausage
2 big onions chopped fine
2 big tomato chopped fine
6 flakes garlic sliced fine
1 inch piece ginger sliced fine
5 pepper corns
5 cloves
2 pieces cinnamon (1 inch)
1 carrot
1/2 cup green peas
1/2 cup elbow macaroni (boiled)
1 big potato cut into medium pieces
1 tablespoon vinegar
1 slit green chili
Method
With the shortage of time, we did a quick cook recipe, but the slow cooking correct method will be provided at the end of the post.
Cut and wash the meat seperately, you can start off with the beef, as it would take the longest time required, we would cook it first.
Apply Salt and add the beef into the pressure cooker with some water to the pressure cooker, do not close the cooker. While this is on the fire you can chop the other meats.
Chop the onions and tomatoes and add more than half of it to the beef along with some water.
Now you can close the cooker and in the meantime, chop some of the garlic and ginger.
If you like you can pound the rest of it.
Open up the pressure cooker in a bit and seperate the beef stock from the rest.
Now you can start cooking the other meats, add the chicken.
Add the chopped pork pieces.
Add the remaining vegetables and its time to add the spices.
Add the pieces of Cinnamon
Add the Peppers and Cloves
Then add the Cardamom pods
Once all the ingredients are added pressure cook one more time.
Add the amount of chillies you need, keep in mind the goa sausage meat too will have some spice
Add the sausage meat and stir up the dish.
As you can see the sausage meat colour has spread to the other meats as well. This is what you would use as a stuffing for Pastelão
Add the potatoes and carrots
Add the beef stock we had kept aside earlier along with the macaroni, the macaroni absorbs quite a bit of the flavour of the dish, if you not too fond of macaroni, you can skip this as well.
Mix it up again and put it in the pressure cooker once more.
Add the broccoli
Add some vinegar and salt as per your taste and finally the mixed meat stew is ready!
Enjoy you goan meat stew piping hot with some rice.
The steps for the alternate method are ~
In the cooker add a little oil; drop in the whole spices and sauté onion, tomato, ginger and garlic.
Add only beef, stir fry till onions are brown and add 2 to 3 cups of water and cook the beef till nearly done.
Now add the other meats, add a little more water and cook till meats are nearly done.
Now add vegetables, slit green chili and cooked till done. Finally add the boiled macaroni with 3 to 4 tablespoon milk (optional) and salt to taste.
Pastelão can also be made using a similar process all you need to do This dish can be turned into a pie by drying up the above meat mixture, putting it into a baking dish,
topping it with bread crumbs, a sprinkling of sugar, dotting with butter and covering with a sheet of flaky pastry and then baked.

Other method of cookin stew is
Put ghee in a saucepan add cinnamon cloves peppercorns cardamons chopped onions till brown then tomatoes garlic ginger and put 5 maggie cubes(or as per ur taste)
separately cook beef in cooker add bay leafs to aviod smell,Add pork/ chicken pieces then put little ghee in pan and saute the meat and keep aside
Saperately boil shell macaroni,cubed potatoes,chopped french beans carrot,peas
Preparation:
Add the meat to the maggie saute then stir it cook for 2 mins add boiled vegetables and after all add the 7 min cooked macaroni

Clyde, you are such a darling to post such recipes. I did the long way (don't know why u say it is long, was pretty fast for me). It turned out so fabulous, just like the ones we used to eat at the goan weddings back in the 90's.
